Why retirement turned into a waiting room, and how to get your energy back


Suddenly, just staying home on the couch sounded a whole lot easier… 🫠 At 45, I'm seeing how so many of us just accept this kind of exhaustion as simply 'a normal part of aging' and it makes me think about how we all want freedom and mobility as we get older. Not some grim dreary future sitting around in a sterile waiting room filling out medical history clipboards every month just to get yet another prescription refilled. It's time to stop guessing, stop counting calories, and start reclaiming your fork.

The Bigger Picture, Reversing Symptoms

Every day I see those ads on TV where they try to make it look SO COOL to have diabetes. You know the ones, where all the neighbors come gather ‘round for a giant block party, dancing, smiling and laughing …acting like joining the chronic illness club is a fun new phase of life. The underlying message is that all you gotta do is take their medication and you can keep right on dancing! 


And of course, right before and right after this commercial will be the ads for a mouthwatering juicy burger, fries, and a soda, and then a $5 large one-topping pizza full of gooey cheese and pepperoni. It's absolutely maddening to witness them openly mocking us like this!

At 45, I look at those ads and think about the second half of life. We all want freedom and mobility as we get older, not some grim dreary future sitting in sterile waiting rooms filling out medical history clipboards just to get prescriptions refilled every month. ​Have you ever looked at all the health changes you've made recently or maybe over the past several years and wondered why things really aren't improving all that much?

You put in incredible amounts of effort. You've bought the supplements they pushed on TV, tried the green elixirs, the liver cleanses, and the expensive protein and meal replacement shakes. You cut the calories, tried portion control, and you definitely cut the carbs. Maybe you even jumped on the keto train or went vegan because someone told you it was the ultimate health hack.


And yet, so many of us are still struggling with excess weight, dealing with joint pain, and running on absolute fumes …which is absolutely maddening because you're doing everything the popular diet books told you to do! Plus, I think so many of us believe that eating well is mostly only about our weight, right? I know I used to.


I had been a mostly organic vegan for two decades. I cooked with some oil, and ate vegan cheeses or meats mostly as a garnish. I ate some chips and crackers sometimes, but I thought heck, by every societal metric we're taught to care about, I looked and felt healthy enough. I only weighed about 100lbs, so I just assumed my body was functioning perfectly on the inside.


But then I got my bloodwork back. My fasting glucose was 105, my total cholesterol was 216, and my "bad" cholesterol was 141. Seeing those numbers was a jarring reality check to say the least. Knowing the impact that even small amounts of processed foods had on my bloodwork made me wonder …had I fallen into my own weird organic vegan version of the "everything in moderation" trap without even realizing it?? 🤦🏽‍♀️


Once I actively tried to remove the oils, sugar, and refined grains, I realized just how pervasive these things really are. It’s frustrating as all get-out just trying to find something simple like chips without oil, crackers without palm oil, or a Celiac-safe bread without refined grains and added sugar, even from the organic mom and pop brands! 

As soon as plant-based eating gained traction, big food companies hijacked the vegan label to sell us boxes of inflammatory junk disguised as the “healthy” choice. It started really bothering me seeing every vegan event and every online vegan megastore packed with endless amounts of junk. It became glaringly obvious, when we attended an event at Animal Place and there was a whole slew of vegan cookies, muffins, donuts, candy, 12 types of vegan cheeses, and 10 types of vegan meats, but ZERO whole food options to be seen.

As industry always does, they saw the chance to capitalize on our desire to make healthier choices and they flooded the market with highly processed products full of isolated plant proteins, refined flour and sugar, high salt and oils, marketing them as “healthy” simply because they lacked animal products. It sure makes you realize that slapping a green leaf logo on a box of processed veggie snacks does a mighty fine job at hiding how detrimental these foods are to our health!


If you're dealing with joint pain that makes a simple flight of stairs look daunting, or you're so exhausted you get winded just walking from the car to the store, it isn't just normal aging. Your declining health is almost always the result of following dietary guidelines funded by the corporations that profit off our sickness. This is true for my fellow vegans as well. No matter how we eat, they lure us in with inflammatory foods and profit off the resulting symptoms.

How corporations protect their profits

I've always been fascinated by the extremely deep ties that corporations have to our food, the healthcare system, the media, and politicians. We wanna be able to rely on our leadership to care for our health and wellbeing, but the laws that are in place make this practically impossible. Corporations are treated like people, and the people with the most money hold the most power …even if it’s at our expense.

To understand why our health guidelines aren’t what they should be, you only have to look at where the money flows. 

The numbers are staggering:

  • The U.S. healthcare industry is a $4.87 TRILLION beast. 

  • Big Pharma is on its way to surpass $1 TRILLION from the huge surge in sales of trendy weight-loss drugs.

  • The retail market size of the entire fruit and vegetable industry sits at a modest $64 billion, and a huge chunk of that is the processed, bagged, canned, and jarred varieties, not even the fresh produce section.

  • The U.S. meat industry alone drives a $911.7 billion total economic footprint, and the dairy industry clears hundreds of billions more.

When you look at the economics, you realize you aren't able to just walk into the store and easily make smart 'dietary choices.' You’re up against a gigantic, interconnected machine, filling the shelves with colorful boxes of processed goods. Such a fitting quote for this (although I can’t seem to find where I read it), "In the world of advertising, nothing is what it seems. What are they really selling us, and at what cost?" When a multi-trillion-dollar apparatus profits off our chronic illness, they’ll spend whatever it takes to protect their bottom line.

I think my fascination with all this started when I was a kid watching Oprah with my mom. She had Howard Lyman on. He’s a multigenerational cattle rancher who turned vegan …yeah pretty shocking I know! They were talking about Mad Cow disease, and Oprah said something like, "I'll never eat another hamburger again." Well, the beef industry went after her with an absolute vengeance. They accused them both of "false disparagement of a perishable food product" and sued them for millions of dollars. Oprah and Lyman eventually won their case, but it cost them a fortune just to fight it.

These crazy "food libel" laws still exist today to ban people from openly speaking negatively about corporate food. It really makes you think… If industry can successfully drag a billionaire to court just to silence her from saying she won't eat a hamburger, what chance does the average person have of getting the actual TRUTH on the evening news?

The "Got Milk" deception and the disease link

Did you grow up seeing those "Got Milk" mustaches on every celebrity and athlete on TV? For over two decades they made an attempt to make milk totally cool, normal, health-promoting, and an absolute staple in every household. I think it's really the only item that people will make an extra trip to the store for, any time it ever runs out. 

Anyway, they used celebrities, athletes, and popular influencers in all the ads, despite the fact that roughly 70% or more of the population is lactose intolerant, particularly BIPOC. And the countries that consume the most milk actually have the highest hip fracture rates, not the lowest …Wait, what?


If you look at the research compiled by Robert Cohen in the book Milk the Deadly Poison, the conditions that are common in children who drink milk include allergies, ear and tonsil infections, bedwetting, asthma, colic and diabetes. He points out that in adults, it trends toward coronary heart disease, arthritis, allergies and sinus infections, leukemia, lymphoma and other cancers. 


It makes sense though, if you really think about it:

  1. No animal in existence is designed to ingest milk past infancy
  2. None drink the milk of another species
  3. We definitely shouldn't be drinking something designed to grow a newborn calf to 700 pounds unless we too wanna ingest growth hormones, exogenous estrogens, and pack on the pounds


On top of that, The China Study, by T. Colin Campbell discusses how casein (the main protein in milk) acts like a light switch that literally turns cancer growth on and off in mice. So if the data is so clear, why do we still hear "experts" pushing it? Because of all the financial interests involved, unfortunately, this kind of health misinformation will continue to pervade our entire culture, despite the science showing detrimental effects on our health.

The political sham and the GLP-1 coincidence

If we look at Open Secrets, we see individuals and PACs associated with the dairy industry made $5.7 million in federal contributions during the 2020 election cycle. The meat industry contributed over $4.1 million. The vast majority of that money, over 83%, went to Republicans. This is so important right now because the current administration is trying to act like they’re finally setting the record straight and going against the industry by introducing the new dietary guidelines. It does go against the junk food industry so of course, that's good, BUT our guidelines have ALWAYS said to avoid junk so it's really nothing new or revolutionary.

Odd coincidence they flipped the food pyramid upside down though… putting grains dead last while at the same time GLP-1s are all the rage. Why do I say this? Well, what they conveniently leave out is that HIGH fiber diets help your body's own natural GLP-1 production, whereas low fiber diets of meat, dairy, and oil actively destroy it.

Yeah, it’s crazy! The new guidelines put whole grains at the bottom of the barrel, but whole grains (not refined) are absolutely essential to human health and longevity because of the fiber. Americans don't even get half the recommendation of fiber to begin with, and now they'll get even less since it's being villainized. But it makes perfect sense when you know about all the industry ties. What's the hot new craze for celebrities right now? GLP-1 weight loss injections. High fiber diets help your body's own natural GLP-1 production, whereas low fiber diets of meat, dairy, and oil destroy it. Fiber rich foods lead to better appetite control and steadier energy throughout the day. It's a very strange coincidence that whole grains are being discouraged right when these expensive injections are being marketed as the ultimate hip, cool solution...hmmm? 🤔


If you wanna start adding more fiber to your plate today, here are a few easy places to start:

  • Acorn squash
  • Quinoa
  • Raspberries and blackberries
  • Green peas and split peas
  • Lentils


Remember to start slow if you’re not used to high fiber foods.

The vegan junk food trap

Let’s not let processed plant-based foods off the hook here. As soon as plant-based eating gained traction, the multi-billion-dollar corporate food machine didn't try to stop it …they saw the dollar 🤑 signs and monetized on it. They realized they could hijack the vegan label to sell us boxes of highly profitable, ultra-processed food disguised as an ethical, “healthy” choice. 

Sure, it can be fun to eat these “treat” foods on occasion, but if we allow those foods to become a regular part of our routine, not only is it harder to practice "moderation" with these addictive foods, but many of them can harm us because of negative health effects. Plus, when we buy these convenient alternatives, our well-meaning dollars are ultimately funneled right back into the bank accounts of the very industrial meat and dairy giants we’re actively trying to avoid. 

Let’s take a look at who’s behind the labels of your favorite alternative brands… 

  1. Silk, So Delicious, Follow Your Heart? Owned by Danone (Dannon), a global dairy giant.
  2. Lightlife and Field Roast? Owned by Maple Leaf Foods, Canada’s largest industrial meat packer. 
  3. Gardein and Earth Balance? Owned by Conagra, a mega processed food conglomerate and #2 of the top meat companies in the world.
  4. Good Planet cheese? Produced by GPV Foods, a joint venture with well-established dairy cheese producer Schuman Cheese. 
  5. Sweet Earth Foods? Owned by Nestlé, a global dairy and processed-food giant that makes major profits from non-vegan products.

Corporate food conglomerates have zero legal interest in our health or in animal welfare; they are bound by law to maximize shareholder profits, and the most profitable items on the grocery store shelves are ultra-processed convenience foods. Taking formulations packed with isolated plant proteins, refined flour and sugars, high sodium, and oils, corporations use multi-million dollar marketing budgets to flood the market. They slap that green leaf logo on the box to hide the reality, commercializing a loop that ensures consumers keep buying processed products while believing they’re making a healthy choice.

Make your own ‘slow fast food’ at home by:

  • Cooking large batches of your favorite meals and freezing them in individual or family size containers
  • Whipping up some homemade banana nice cream instead of sugary store bought
  • Bake your own oat and fruit bars and wrap them in parchment and freeze
  • Pocket potato - microwave a sweet potato and eat it cold later
  • Cube tofu or potatoes and air fry with your fave seasonings without oil
  • Chop up an apple, banana, some oats, and a date and bake for a quick dessert. Add cinnamon or ginger for a health boost

The nutrition education gap

Years ago when I wanted to study nutrition, I was researching the difference between certified nutrition consultants and registered dietitians. I kept coming across article after article that pretty much bashed anyone who wasn't a licensed dietitian. Mocking and belittling all who were "merely" certified. RDs absolutely go through MUCH lengthier schooling indeed, but who funds much of the curriculum? Well, through my extensive research I found the answer... industry.

Food corporations that own the fast food companies, all the popular snack food, candy, and soda brands, the meat and dairy industry. So it finally made sense why they're schooled to teach "there are no good or bad foods" "everything in moderation" silly nonsense. The same messages we hear from our doctors, the TV, the ads, the fast food and snack food companies.

The curriculum of nutrition certifying bodies varies, but I chose AFPA for my education, and the textbooks were very current and forward thinking. Not all of it was fully plant based, but much of it promoted a predominately whole food plant-based diet, and some of the textbooks were fully WFPB like Dr T. Colin Campbell, Dr Joel Fuhrman, Dr Michael Greger. They didn't have ads, pamphlets, papers, or research from the big fast food giants, or the meat and dairy industry. One of my favorite books is Whole by Dr T. Colin Campbell, and I just purchased a used copy of Appetite For Profit by Michele Simon which I'm super excited to get into. They expose how the advice we get from the top down has been completely hijacked by corporate interests.

Breaking free

We've been told throughout our lives that our diet is a personal choice, but when you look at the economics, you realize you aren't just choosing your 'dietary preferences,' you’re up against a massive, interconnected machine.

​It starts with the $1.6 trillion meat and dairy industrial complex that fills our plates with inflammatory, disease-promoting food. When that food inevitably makes us sick, we're handed off to a $1 trillion pharmaceutical industry and a $4.87 trillion healthcare system that profits from managing our symptoms, not preventing or curing our illness.

Together, that's a $7.5 TRILLION economic juggernaut that dictates our health guidelines, fills our waiting rooms, and treats our very lives as a recurring revenue stream. You aren't failing at your health, the system is succeeding at extracting profit from you and your loved ones.

The system was built to keep you in the waiting room, not to get you out of it. They want you exhausted, inflamed, and dependent on the very cycle that profits from your pain. From the food on your plate to the pills in your cabinet.

But YOU have the control right in your own kitchen. You were never meant to be a permanent resident of the endless waiting rooms, filling out clipboards while life passes you by. You were meant to thrive and be active with the energy to truly enjoy the years you worked so hard for. If you want your energy back, you can't get there by restricting calories or avoiding carbs. You get it back by eating an abundance of the foods we were taught to fear. Big plates of whole grains like rice, pasta, and quinoa; loaded baked potatoes, veggies, and fruits. Fiber and nutrients required to ease the inflammation and get you off the medical treadmill. It's time to stop guessing and get you on the path to feeling great.

If your bloodwork keeps trending in the wrong direction despite all the work you’ve been putting in, it’s SO easy to feel like it’s you who’s failing. But don’t give up hope yet. Because it's not you, it’s just that the dietary rules you've been trying to follow were never designed to help you thrive. They sell us the food that causes the inflammation, then they sell us the pills to treat it, and they rely on all of us being too exhausted to question it.
